Big Pan Cooking
This is one of the newer, fun ways of eating! At Apex we strive to take the concept of catering, encompassing the world's cuisine, to the next level; originally of Spanish Paella fame we have created a big pan menu. Using our own big pans, some made in our own catering engineering workshop, we combine virtually all the ingredients into one big pan letting flavours mingle for a new taste sensation. This method of cooking and presentation suits small to medium parties (30-150 people). We can, of course, cook for larger functions by increasing the number of big pans used.
The Big Pan is a really flexible way of eating, we provide 'a portion per person' for £10 a head - these are big sized portions, and we always do more food than guest number indicators ... this allows for someone to have 'half and half' of two pans, or one large full portion from one pan, or 'seconds', or samplings from all the pans etc. All you have to decide is the number of guests and the ratios of food in the pans.
Example 1: 2 Big Pans and 1 Small Pan for 140 guests at £10 per head - you decide the ratio of food should be 70:50:20 - the 70 portion pan being what you think would be the most popular dish, the 50 portion pan being a nice second choice and the 20 portion small pan being a tasty vegetarian dish etc. The price also includes salads, breads and dips etc.
Example 2: 1 Big Pan and 1 Small Pan for 70 guests at £10 per head - you decide the ratio of food should be 50:20 - the 50 portion large pan being your favourite dish and the 20 portion small pan being a vegetarian or seafood pan. The price also includes salads, breads and dips etc.
The only thing we will say is that the large pans look good with over 50 portions in them, as they cover the bottom of the pan and look impressive, (the largest pans can cope with over 70 portions in them each) the smaller pans look good and are full at around 20 or so portions.
The standard cost is £10 per head (we charge over £10 per head for a specialized big pan with expensive ingredients, like lobster paella, or truffle and wild mushroom risotto etc. if you fancy a really special, exclusive dish).
